И хотя рецептов жульена существует великое множество, самым популярным является тот, который готовится с грибами и курицей. Приготовить его достаточно просто, при этом результат кулинарных трудов не может не радовать.

 

Как приготовить жульен

Рецепт жульена с грибами и курицей совсем не сложен.
Для его приготовления потребуются следующие продукты:

  • 500 г грибов;
  • 500 г филе куриного бедра;
  • две средних луковицы;
  • растительное масло для обжаривания;
  • 100 г сливочного масла;
  • три столовых ложки муки;
  • два стакана молока;
  • 300-350 г твердого сыра;
  • соль и молотый черный перец по вкусу.

Сначала нужно нарезать подготовленные грибы тоненькими пластинками и обжарить. Затем нужно слегка обжарить слегка отбитое куриное филе, нарезанное мелкой соломкой. Следующим этапом поджариваем до золотистого цвета измельченный лук.
Следом идет очередь соуса. К растопленному в сковороде сливочному маслу постепенно добавляем муку и прогреваем пару минут, после чего, не снимая смесь с огня, очень осторожно тоненькой струйкой вводим молоко. При   этом не забываем постоянно помешивать соус, во избежание  образования комочков. В результате должна получиться консистенция наподобие жидкой сметаны. Добавляем соль и немного молотого черного перца.
Приступаем к финальному этапу приготовления нашего блюда. Отправляем в сотейник с соусом подготовленные лук, курицу и грибы. Слегка все тушим. В это же время натираем сыр. Перекладываем все в формы, присыпаем сверху сыром и отправляем в духовой шкаф с температурой около 180 градусов минут на пять. Жульен с курицей и грибами готов.
В идеале закуску следует запекать жульен в специальных формах, которые называют кокотницами. Однако, при их отсутствии подойдут и любые другие формы для запекания или небольшие формочки. Можно также запечь жульен с курицей и грибами на сковороде. Если у вас намечается фуршет, отличным вариантом будет приготовить жульен в тарталетках из песочного теста.

В качестве основы для жульена можно использовать любые грибы, но предпочтительнее будет выбрать шампиньоны, лисички или белые грибы.
Если у вас по коким-то причинам нет времени на приготовление соуса, попробуйте заменить его сметаной или же майонезом.
При обжаривании лука не дожидайтесь, пока он приобретет золотистый цвет. Это может испортить вкус блюда.
Курицу для жульена можно не обжаривать, а отварить и нарезать. Возможно, так вам понравится больше.
Помните о том, что едят готовое блюдо, не используя нож, поэтому все продукты должны быть нарезаны достаточно мелко.
Хотя жульен и считается горячей закуской, в холодном виде он будет ничуть не менее вкусен.
