Ингредиенты:

  • шампиньоны;
  • оливковое масло;
  • морская соль;
  • душистый перец;
  • петрушка;
  • яблочный уксус;
  • чеснок;
  • белая луковица.

Рецепт приготовления:

Перед приготовлением желательно не мыть грибы, чтобы они не впитали лишнюю влагу, а почистить их кисточкой. Если все-таки необходимо грибочки промыть, то это нужно сделать очень быстро и после этого сложить их на бумажные полотенца, чтобы они тщательно просохли. Для жарки грибы должны быть полностью сухими. Когда используются сваренные грибы, необходимо слить с них воду и оставить подсохнуть.

Сковороду нужно заранее подогреть. Нельзя жарить грибы на теплой сковороде, поскольку так получается очень много воды и грибы тушатся в ней, а не жарятся, потому что они отдают жидкость раньше, чем начинают жариться.

Шампиньоны нужно обжаривать на сухой сковороде, пока не испарится вся вода. Этот процесс происходит примерно 4 минуты. После этого следует добавить оливковое масло.

Затем  следует приправить шампиньоны морской солью и душистым перцем и поджаривать еще минут семь-восемь, пока все грибы не станут мягкими. После стоит влить в сковороду пару столовых ложек вина и подождать пока испарится алкоголь, добавить мелко шинкованную зелень и перемешать.

Можно приготовить шампиньоны жареные с луком. Лучше всего подойдет белый лук или порей. Нужно нарезать лук полукольцами и добавить его к грибам за 5 минут до готовности.

Аналогичным образом можно приготовить любые другие грибы, в том числе и лесные. Однако собранные самостоятельно грибочки лучше будет перед обжариванием слегка отварить.
