Хлеб с яйцами и горошком — рецепты царской России


Как приготовить хлебЛакомство готовят так: 1/2 батона или багета нарезать ломтями, обмакнуть в молоко и обжарить в масле; затем взять 2 сырых яйца, 3 столовых ложки молока и немного соли, сбить все это вместе и залить хлеб. К хлебу подается тертый сыр или соус из горошка, приготовленнй таким образом: 1/8 фунта зеленого горошка промыть и оставить стоять в воде часа 3-4; затем поставить на огонь.

Когда горошек увариться, т.е. будет мягкий, положить в него немного соли, 2 чайн. ложки сахара, 1 столовую ложку пшеничной муки, 1 столовую ложку уксуса и 1 чайн. ложку сливочного или топленого масла, и все это прокипятить. После чего соус из горошка будет готов.
