Как приготовить цыпленка табакаЦыпленок табака — это легендарное блюдо. В прошлые годы это блюдо было самым знаменитым, особенно в грузинских ресторанах. Секрет  приготовления цыпленка табака очень прост. Для этого нам понадобиться специальная сковорода с тяжелой крышкой (тапака). Отсюда и произошло название блюда. Тяжелая  крышка необходима для того, чтобы тушка цыпленка основательно  прожарилась и образовалась  хрустящая корочка. Если же среди вашей кухонной утвари нет таковой, то и это не беда, можно воспользоваться обычной крышкой, только сверху поставить что-то  тяжелое (гнет), например банку с водой. Как приготовить цыпленка табака?

Что нам понадобится для приготовления:
Тушка цыпленка, чеснок, соль, молотый черный перец, паприка, растительное масло.

Приготовление цыпленка табака
Цыпленка промываем под проточной водой и бумажным полотенцем просушиваем его. Затем разрезаем вдоль грудки и, распластав на разделочной доске, хорошенечко отбиваем, особенно в местах, где суставы. Натираем курицу солью, перчиком и паприкой от души со всех сторон. Очищаем чесночок, пропускаем его через пресс и проделываем то же самое. Потом смазываем сковороду растительным маслом и на сильном огне раскалим ее.

В качестве пресса мы возьмем кастрюлю наполненную водой, главное, что бы она соответствовала размеру тушки. Во время жарки цыпленка нужно периодически переворачивать и вот тут не забывайте каждый раз плотно прижимать кастрюлю с водой. Тушка цыпленка должна прожариться как снаружи, так и внутри. С тушкой нашей курочки проделываем те же манипуляции, а вот дальнейший процесс слегка отличается.  На противень, заранее смазанный маслом, укладываем шкуркой вверх цыпленка табака.

Ставим в разогретую духовку, градусов до 180  и жарим примерно30-40 минут, через 15-20 минут открываем  духовку и обильно  поливаем  тушку соком, который уже выделился за это время. Есть небольшой нюанс, во время приготовления цыпленка табака в духовке нельзя допустить, чтобы мясо пережарилось.

Готовность блюда проверяем зубочисткой, сок должен быть прозрачным, а не красным. Подавать цыпленка табака можно с любым гарниром, здесь вашей фантазии будет, где разгуляться. Приятного аппетита!
