Что приготовить на новый год из горячегоЧтобы весь следующий в год в доме было изобилие и достаток, новогодний стол должны быть богатым на угощения. 

Такова традиция, и отступать от нее никто не намерен. Вопрос, что приготовить на Новый год из горячего уже много лет, как не актуален. Ведь всем известно, что главным украшением зимнего стола всегда был жареный гусь или утка.

Дичь в шоколаде
Дичь, набитая яблоками, уже набила оскомину. Пора искать новые вариации на тему. Например, птица в соусе из горячего шоколада.

Для начала утиную грудку нужно поджарить на оливковом масле, а потом переложить ее в духовку до окончательного приготовления. В это время делаем винно-шоколадный соус: 300 г куриного бульона, 300 г хорошего портвейна и плитку черного шоколада разогреваем на медленном огне. Ждем пока жидкость не испариться– в конечном варианте объем должен составлять третью часть от первоначального. Именно этим густым соусом поливаем утиную грудку перед подачей на стол. Также можно добавить изысканности блюду украсив его фольгой из горячего тиснения.

А целую утку можно нафаршировать баклажанами и помидорами. Как вариант к дичи можно подавать и сливочный соус. Рецепт такой подливки прост – смешиваем жирные сливки с мукой и выливаем на сковороду, где обжаривается лук со специями. Буквально через минуту соус загустеет и будет готов к употреблению.

Рыба в кляре
На вегетарианском столе традиционно главенствуют рыбные блюда. Но создать кулинарный шедевр– нафаршировав щуку, под силу не каждому. Поэтому мы пойдет кратчайшим путем, и приготовим поистине королевскую рыбу в кляре. Для этого нам понадобится филе нежнейшего палтуса. Разделив тушку на порции, приступаем к приготовлению кляра. Панировка будет более хрустящей и значительно вкуснее, если в муку вместо воды добавить кефир или светлое пиво. Также вместо целого яйца лучше добавить два желтка.
Теперь обмакиваем рыбу в кляре и зажариваем до хрустящей корочки.
