Как варить кислые щиДля приготовления кислых вегетарианских щей надо взять 200 граммов кислой капусты, тщательно промыв ее дважды в воде, затем смешать с одной мелко изрубленной небольшой луковицей, добавить в нее 1 столовую ложку масла и жарить до мягкости. Когда капуста обжарится, положить в нее 1/2 столовой ложки пшеничной муки, 1 лавровый лист, 5-6 горошин перца, по вкусу, соли, и все это смешать.

Одновременно с жареньем капусты следует налить в кастрюлю 1,5 бутылки холодной воды; вскипятить ее, опустить в нее 2 или 3 гриба (любых). Затем, когда кипяток с грибами прокипит раза 2, опустить в него приготовленную выше капусту и поставить снова кипеть не менее 3/4 часа (45 минут).

К этим щам хорошо идет сметана.
