Как приготовить холодный свекольник Свекольник – это  холодное первое блюдо, аналог украинского борща. Свекольник лучше подавать в теплое время года, когда из-за жары кушать более тяжелые блюда просто не хочется. Важно не только правильно его приготовить, но и красиво оформить, ведь прием пищи – это, своего рода искусство.

Для начала нужно определиться с количеством порций, а значит и с объемом продуктов, которые нужно нашинковать. Дело в том, что это блюдо не следует ставить в холодильник и держать там несколько суток – вкус ингредиентов смешается и блюдо потеряет неповторимую вкусовую композицию.

Что нужно?

  • Картофель, предварительно сваренный «в мундире». Для полутора литров свекольника потребуется три-четыре картофелины средних размеров.
  • Морковь, тоже вареная. Еще, кстати, можно приготовить в одной кастрюле с картофелинами. Морковка нужна одна, тоже среднего размера.
  •  Лук, можно заранее промаринованный в уксусе с солью и сахаром. Можно и не маринованный, а тушеный на сковородке. Это уже зависит от того, более или менее острый вкус вы предпочитаете.
  • Грибы. Лучше, грузди. Если правильно солить грузди, то их аромат не сравнится ни с каким другим грибом. А если вы готовы сами не только солить грузди, но и собирать их своими руками, конечно по правилам, то результат будет выше любых надежд.
  • Квас, его тоже лучше предварительно сделать самим. Ни один магазинный продукт не сравнится с квасом, приготовленным своими руками. Некоторые вместо кваса используют свекольный отвар с добавлением лимонного сока.
  • Копченое мясо или копченая колбаса. Лучше, мясо. Чем меньше жиров будет в готовом блюде, тем оно будет лучше и полезнее.
  • Зелень: петрушка, укроп, базилик, тархун. Конечно, все зависит от вкусовых предпочтений, но здесь действует правило: чем больше, тем лучше.
  • Свекла. Подойдет баночка маринованной либо небольшая отварная.

Все ингредиенты аккуратненько нарезать, залить холодным квасом, дать 20 минут настояться. При подаче можно украсить рубленым желтком и добавить сметану.
